火雞即吐綬雞(Turkkey)，又稱七面雞，本為野生，現(xiàn)已馴化為肉用家禽。全身被黑、白、深黃等色羽毛。頭、頸上部裸露，有紅珊瑚狀皮瘤，喉下有肉垂，顏色由紅到紫，可以變化。公火雞尾羽可展開呈扇形，胸前一束毛球，母火雞重為8-9千克，年產(chǎn)火雞蛋50-80枚，每枚蛋重20-80克。目前飼養(yǎng)品種以“青銅火雞”和“白色火雞”為多。
火雞以其體形大，生長(zhǎng)迅速，抗病性強(qiáng)，瘦肉率高而受人矚目，可與肉用雞媲美，被譽(yù)為“造肉機(jī)器”。火雞肉不僅肉質(zhì)細(xì)嫩、清淡，而且在營(yíng)養(yǎng)價(jià)值上有“一高二低”的優(yōu)點(diǎn)。一高是蛋白南含量高，在30%以上;二低是火雞肉在國(guó)外被認(rèn)為是心腦血管疾病患者的理想保健食品，同時(shí)，火雞肉也是益氣補(bǔ)脾的食療佳品。目前，世界上有許多國(guó)家以火雞肉代替牛肉、豬肉、羊肉和鴨肉。
