　　有一個(gè)名叫丁的廚師替梁惠王宰牛，手所接觸的地方，肩所靠著的地方，腳所踩著的地方，膝所頂著的地方，都發(fā)出皮骨相離聲，刀子刺進(jìn)去時(shí)響聲更大，這些聲音沒有不合乎音律的。它竟然同《桑林》、《經(jīng)首》兩首樂曲伴奏的舞蹈節(jié)奏合拍。

　　梁惠王說：“嘻!好啊!你的`技術(shù)怎么會(huì)高明到這種程度呢?”

　　庖丁放下刀子回答說：“臣下所探究的是事物的規(guī)律，這已經(jīng)超過了對于宰牛技術(shù)的追求。當(dāng)初我剛開始宰牛的時(shí)候，(對于牛體的結(jié)構(gòu)還不了解)，無非看見的只是整頭的牛。三年之后，(見到的是牛的內(nèi)部肌理筋骨)，再也看不見整頭的牛了�，F(xiàn)在宰牛的時(shí)候，臣下只是用精神去接觸牛的身體就可以了，而不必用眼睛去看，就象視覺停止活動(dòng)了而全憑精神意愿在活動(dòng)。順著牛體的肌理結(jié)構(gòu)，劈開筋骨間大的空隙，沿著骨節(jié)間的空穴使刀，都是依順著牛體本來的結(jié)構(gòu)。宰牛的刀從來沒有碰過經(jīng)絡(luò)相連的地方、緊附在骨頭上的肌肉和肌肉聚結(jié)的地方，更何況股部的大骨呢?技術(shù)高明的廚工每年換一把刀，是因?yàn)樗麄冇玫蹲尤ジ钊�。技術(shù)一般的廚工每月?lián)Q一把刀，是因?yàn)樗麄冇玫蹲尤タ彻穷^�，F(xiàn)在臣下的這把刀已用了十九年了，宰牛數(shù)千頭，而刀口卻像剛從磨刀石上磨出來的一樣。牛身上的骨節(jié)是有空隙的，可是刀刃卻并不厚，用這樣薄的刀刃刺入有空隙的骨節(jié)，那么在運(yùn)轉(zhuǎn)刀刃時(shí)一定寬綽而有余地了，因此用了十九年而刀刃仍像剛從磨刀石上磨出來一樣。雖然如此，可是每當(dāng)碰上筋骨交錯(cuò)的地方，我一見那里難以下刀，就十分警懼而小心翼翼，目光集中，動(dòng)作放慢。刀子輕輕地動(dòng)一下，嘩啦一聲骨肉就已經(jīng)分離，像一堆泥土散落在地上了。我提起刀站著，為這一成功而得意地四下環(huán)顧，一副悠然自得、心滿意足的樣子。拭好了刀把它收藏起來。”

　　梁惠王說：“好啊!我聽了庖丁的話，學(xué)到了養(yǎng)生之道啊。”
